MANGO AND AVOCADO SALSA

MANGO AND AVOCADO SALSA
"Let's Eat Summer Series"

Vibrant, light & healthy. Perfect with fish. Of course I've been known to get a small bowl of it to snack on!

Ingredients

1 avocado
half a mango
about half a small cucumber
half a red chilli, finely chopped
3 spring onions
small handful fresh coriander leaves, chopped
juice of 1 lime
tiny pinch of salt

Method

1. Chop the avocado, mango and cucumber to small similarly sized cubes (about half an inch/1 cm).

2. Chop the spring onions to about the same size.

3. Put all the ingredients in a bowl and mix thoroughly.

4. Serve immediately.
